Shrimp and Avocado Salad.
1 lb cooked medium sized shrimp
1 med sized tomato, seeded and chopped
3 scallion chopped
1 large clove garlic, pressed
2 TBS fresh lemon juice
1 TBS balsamic vinegar
1 large firm avocado cut into cubes
1 TBS chopped cilantro
1 TBS chopped fresh mint
salt & pepper to taste
pinch red pepper flakes
1 head romaine lettuce
* I like to allow it to set for at least 15 min. in frig if I have the time, but
either way this is a very healthy and delicious salad.
